The knife blade is guided precisely and without pressure as it glides through 2 ceramic grinding wheels at a precise angle, which rotate and grind the blade in two steps, first coarsely and then finely.
The water-cooled ceramic wheels - unlike sharpening steel and similar tools - do not only temporarily adjust the degree of the blades, but also carefully rebuild the substance of the blades by means of the recurring, constant grinding process, creating a blade geometry with lasting cutting edge retention, which is not only lightning sharp, but also impresses with its remarkable blade stability.

Instructions:
1 - Fill water reservoir through filler channel ( drop icon) up to mark.
2 - Rough grinding: move knife through slot #1 (1 point) 15-20 times with very little pressure.
3 - Fine grinding: Move knife without pressure (only own weight) 15-20 times through slot #2 (2 points).
Both grinding processes can be done either by a back & forth movement or only in one direction.
4 -Remove cover, pour out water.
5 - Rinse out front compartment & put cover back on.
For knife freaks: Let the grinding wheels soak in water for 15 minutes beforehand. To do this, place the front part of the grinder in a water bath.
Important: The wheels must be completely covered with water.
