GLOBAL SAI / NAKIRI PARING KNIFE
3 layers of steel - the middle layer blade hard and brittle, outside softer and thus flexible. One finds per se already relatively rarely. The upper part of the blade in the direction of the back of the knife is provided with a discreet hammered structure and thus actually effectively prevents moist cuttings from sticking to the blade.
Introduction
PRODUCT DESCRIPTION
Rarely have we been so divided on whether or not to include an item in the store:
The extravagant handle is initially irritating and dominant in the overall impression that you can approach the knife only with difficulty on another level.
Yet it is actually the great blades that should be the focus:
3 layers of steel - the middle layer blade hard and brittle, outside softer and thus flexible. One finds per se already relatively rarely.
The upper part of the blade in the direction of the back of the knife is provided with a discreet hammered structure and thus actually effectively prevents moist cuttings from sticking to the blade.
That looks pretty good, by the way.
The most beautiful detail on the entire knife, however, is definitely the "silver line" at the front of the blade (we'll just call it that for lack of a better name), that leisurely meandering line at the hand-ground transition between the layers of steel - the signature of the experienced knife grinder, and thus a direct, visible and above all quality connection to the craftsman behind the otherwise flawless industrial product.
Quite classy, if you think about it that way.
And now for the handle.
Man man man. Very extravagant indeed.
But - you get used to it.
And ergonomically you can not reproach the handle much, on the contrary:
The hollow handle is filled with fine sand and thus carefully levels the entire knife at the handle recess.
This means that even the large knives can be moved smoothly and place little strain on the wrist. Impeccable.
Real advantage of the streamlined design and the exclusive use of stainless steel and seamless finish:
The knives are easy to clean and always make a very hygienic impression.
Bottom Line:
Very unique, high-quality knives with impressive blades and thoughtful details.
And perhaps the Global SAI are one of the products that need a little time in the relationship:
If they felt very much like foreign objects here at first, we find ourselves holding a Global SAI more and more often in everyday life, especially the large blades, and especially the Santoku:
Somehow the silvery, shimmering, weightless aesthetic continues seamlessly into the feel - the polished stainless steel in your hand is full of smooth, vibrating energy and you feel like you're cutting especially "well."
Kind of wacky, but quite apt.
